
About the roastery
This is where the magic happens and where our roastery team "turns the beans brown".
We started our roasting endeavors at the end of 2018 on a San Franciscan SF25. Our OG roasting space was located right next door to our Uptown location and as we've grown so has our need for a little more elbow room!
At the roastery we roast coffee (obviously) on a 35kg Loring but we also do all of our packing, order fulfillment, QC and even some training. In a lot of ways our roastery serves as the heart of Little Bear.

What is Coffee Roasting?
At its core roasting is taking raw coffee, otherwise known as green coffee, and using heat to cause a chemical reaction within the coffee. These chemical reactions are what lead to coffee in the form we all know and love!
What is Green Coffee?
Green coffee is coffee in it's raw form. Green coffee is essential in order to have roasted coffee and it's the backbone of everything we do.
Where do you get your Green Coffee?
We work with both producers directly as well as with a handful of green coffee importers.
How do you come up with the Tasting Notes on your bag?
Our QC and green buying team cup all of our coffees and help come up with the notes you see on our bags. These tasting notes are there to serve as a general guide for what we think a coffee tastes like. Taste is super subjective so if you're not tasting what we're tasting that's totally okay!
What is Cupping?
Cupping is essentially the industry's way of standardizing how we taste coffee! Cupping is meant as a way to easily evaluate and compare coffee no mater where you are in the world.

What do you roast on?
For production roasting we roast all of our coffee on a Loring S35 Kestrel and for sample roasting we use an Ikawa Pro 100X.

About our coffee sourcing
Over the past several years, we've dedicated ourselves to the pursuit of excellence within our craft. To us this means focusing not just on the end product but also investing our time into turning our producer partnerships into long-term friendships. As an industry, we often forget that everyone within the supply chain is sitting on the same side of the metaphorical table. In our own ways, we're all working towards creating value for our end consumer in order to raise the bar and push the industry forward. A great example of this is our continued partnerships in both India and Colombia.
Our goal is to dig deeper and not wider. To us this means working towards intentionally growing the partnerships we already have, rather than constantly chasing “the next-best-thing.” To us this is how we create a more stable supply chain not just for our producing partners but also for our customers.
