The Process:
Natural (or sundried) processing is the most traditional processing method for coffee! In Natural processing the whole cherry is left on the coffee and is placed on flat raised beds or patios to fully dry out (think turning the coffee cherries into little coffee raisins!). While natural processing can take longer than some other processing methods it can be a more accessible processing method for smaller producers while still having those complex fruity notes that the Little Bear team loves.
About the Varietal:
Striped Bourbon coffee is a unique Arabica variety, a natural mutation of Red Bourbon, distinguished by orange stripes on its coffee cherries, offering complex fruity and floral flavors often highlighted by innovative processing like thermal shock or anaerobic fermentation, making it a prized find for coffee enthusiasts seeking unique profiles. It's cultivated in Colombia and known for vibrant notes of tangerine, kiwi, grape, and tea, with a bright acidity and smooth body.

About Alexander:
Alexander Vargas started his coffee journey at age 15, following in his parents’ footsteps. At 20, he focused on specialty coffee production and has spent over 20 years refining his skills and experimenting with various coffee varieties and processes. At La Piragua’s farm, Alexander utilizes advanced techniques such as anaerobic processing for varieties like pink bourbon and geishas, and he has cultivated award-winning coffees that have earned him multiple national Cup of Excellence nominations.

This coffee evokes the sensation of visiting the boardwalk. The warm, salty air hits your lungs just right, and as you walk around, you munch on saltwater taffy. It's peak summer, and the heat feels both soothing and stifling. As you go to leave, you notice a little farm stand selling cherries and fresh raspberries, which will make the perfect snack for your drive home.
