The Process:
This coffee was picked and delivered to the processing yard where it was allowed to ferment in-cherry until the next morning when it was pulped and then fermented a second time, in-parchment. The second fermentation took place in mossto (juice made by compressing coffee cherries in this case Gesha) for 72 hours before being sun-dried on flat raised drying beds for 20-30 days.

About Sara:
For Sara, coffee represents both heritage and opportunity. She sees her role as part of a new generation of farmers, bringing fresh perspectives, knowledge, and techniques into agriculture. With a background in microbiology and fermentation, she has studied how to generate organic acids naturally and control processes in ways that elevate the quality and safety of coffee always treating it as the food product it truly is. What she values most about her work is being able to give new life to a tradition that, not long ago, seemed to be fading. Eight or nine years ago, continuing coffee cultivation was a daunting challenge, but through specialty coffee and access to international markets, her family found a way to keep their legacy alive. Today, Sara feels deep gratitude toward the partners and buyers who believe in their work, as they continue to learn and grow.

This coffee evokes the feeling of walking through a lush meadow. Everywhere you look, multicolored flowers are in bloom, and the air is almost singing with their fragrance. As you continue walking, you notice the gentle lull of bees humming around you as well as just how green the grass that surrounds you is. You take a deep breath and wish you could stay here forever, but alas, you have to get back home so you can enjoy your latest acquisition from Little Bear Coffee because you know it'll transport you back to this moment with every sip.
