The Process:

Washed processing involves de-pulping the coffee cherry. A bladed tool is used to cut open the cherries, extract the seeds and discard the empty fruit. The coffee is then soaked in water to soften the seed and typically is left to ferment for 12 to 72 hours. Afterwards the coffee is washed clean of any remaining fruit, mucilage and silverskin before it’s finally dried. Washed coffees are the most common processed coffees you’ll see!

About the Norma:

Norma Veronica Huillca lives in the small town of Suyo in Cusco, Peru's Lares district in the Calca province. Her farm is called Huaynapata , which is Quechua for "young mountain." Lares district is a unique area with a wide variety of environs, where you can perceive drastic changes in the terrain and climate in just a couple of hours’ travel. Lares is also a small town within the Lares district, made up of 60 coffee-producing families. The majority of the population is originally from the area, primarily speakers of the native language Quechua. Lares's valleys are lush and fertile with a semitropical climate perfect for growing coffee. Because the valley is located in the middle of the Cusco Andes, it can be extremely challenging to get from one town to another. Very few farms have road access, so it takes several hours of walking on densely foliated slopes to reach most of the farms. To get there we have to drive for almost 7 hours from the city of Cusco. As in many other remote communities, the lack of opportunities for young people is a serious problem that threatens the existence of this ancient community. Norma grows citrus and coca in addition to coffee, but coffee’s importance as the primary crop is undisputed.
