The Process:
Washed processing involves de-pulping the coffee cherry. A bladed tool is used to cut open the cherries, extract the seeds and discard the empty fruit. The coffee is then soaked in water to soften the seed and typically is left to ferment for 12 to 72 hours. Afterwards the coffee is washed clean of any remaining fruit, mucilage and silverskin before it’s finally dried. Washed coffees are the most common processed coffees you’ll see!

About the washing station:
This Washed Tima lot is produced at the Wessi Washing Station, located deep within the Guji Zone, in Ethiopia’s Oromia Regional State. It is truly a one-of-a-kind coffee from the passionate producers at Sookoo Coffee. The Wessi Washing Station is located approximately 415 kilometers away from Addis Ababa and sits at an elevation ranging from 2,000 to 2,180 meters above sea level, offering optimal conditions for producing high quality coffee. This coffee comes from the collaborative effort of 35 dedicated farmers from the small village of Tima, hence its name.

This coffee evokes the sensation of being enveloped in cozy essential oils, your body wrapped in a plush white towel, and the warm steam of a sauna soothing your aching joints. You can feel your body start to loosen up with each step you take for your massage. These self-care spa days are few and far between, and you intend to savor this moment for as long as you can. You go to take a sip of the beverage you've been handed, and instead of being the usual suspects, cucumber water, something else dances on your tongue that you can't quite place. Is it coffee? But it can't be! It's too serene to be coffee… except it is! You ask the masseuse what it is you're drinking, and they tell you it's the newest washed Ethiopia from Little Bear. As soon as you get home, you jump on your laptop to order yourself a bag. While spa days can't last forever, you can at least have this little piece of heaven from the comfort of your own home.
