The Process:

Washed processing involves de-pulping the coffee cherry. A bladed tool is used to cut open the cherries, extract the seeds and discard the empty fruit. The coffee is then soaked in water to soften the seed and typically is left to ferment for 12 to 72 hours. Afterwards, the coffee is washed clean of any remaining fruit, mucilage and silverskin before it’s finally dried. Washed coffees are the most common processed coffees you’ll see!

About the community: 

The Sierra Mazateca, is part of the Sierra Madre de Oaxaca mountain range, located far north of Oaxaca state. The area is named after the Indigenous Mazatec people who live in this area. We are proud to work with many of the Indigenous coffee producers in this region. La Union is a small group of loosely associated producers based in and around San Mateo Yoloxochitlán.

Over the last several years, we’ve been on the hunt to find the best Mexican coffee. An impossible task with a region that continually produce and surpass incredible coffee after incredible coffee– the La Union is no different. In the cup, it is a breath of fresh air; a beautiful balance of creamy milk chocolate, delicate fruit and lovely floral notes. It has become one of our favorite coffees and we hope you’re able to enjoy it as well.
