The Process:

Anaerobic fermentation is a coffee processing method where coffee cherries are fermented in an environment where the coffee is deprived of oxygen during the fermentation stage! Deprivation of oxygen can happen within a bag, vat, or other container that limits oxygen’s ability to reach the coffee as it ferments. The oxygen is then released via a one-way valve, or specifically pushed out by forcing carbon dioxide into the container being used. This allows for a longer fermentation phase to occur without the risks of over fermentation! In this case the coffee underwent 108 hours of Anaerobic fermentation and was dried in a mechanical silo for 24 hours at a temperature of 28°C, followed by 12 days in drying sheds.

About Producer: 

Jhony Melo is one of the sons of Nelson Melo, born in Samaniego, Colombia. Nelson moved to the Caldas region, 900km away from his origin, to escape the constant threats of armed conflicts in that region. With his wife Maria Bercelia Ortega, he bought Hacienda Bellavista. Jonny has always helped his father with the farm. Some years ago, Nelson rewarded him with a piece of land where he could grow his own coffees on! Jonny took this opportunity with commitment and enthusiasm and in his short time as an individual coffee grower, has received two awards.

This coffee is very special to the Little Bear team! Our partnership with Jhony started off like any other producer relationship but very quickly turned into a fast friendship. From getting the chance to visit Jhony and his family at their farm in Colombia to collaborating on a couple of custom nano-lots, this coffee being one of them, this partnership has proven that collaboration, intentionality, and passion are the backbone of the specialty coffee industry.
