The Process:
Natural (or sundried) processing is the most traditional processing method for coffee. In Natural processing the whole cherry is left on the coffee and placed on flat raised beds or patios to fully dry out, leaving little coffee raisins. While natural processing can take longer than other processing methods it is also a more accessible processing method for smaller producers. This method is loved by the Little bear team because of the complex fruity notes it creates.

Why We’re Stoked!
We visited Ashok and his family, in January of this year, during their harvest of this coffee! This is our second year working with Ashok and we are excited to continue serving his coffees for years to come. In our opinion, Ashok is one of the main people who is pioneering the specialty coffee movement in India. His investment and hard work at Ratnagiri is inspiring and has allowed the estate to offer some of the most exciting coffees on the market.
Ashok’s commitment to soil health and regenerative agriculture makes his farm one of the most beautiful, biodiverse lots we have ever visited. This coffee is a “natural processed” lot using Catuai and Caturra coffees from all over the Ratnagiri Estate. This coffee has notes we’ve come to expect and love about Indian coffees, like warm baking spices & dark fruit notes. We hope you love this coffee as much as we do, keep an eye out for more Ratnagiri coffees at LB, in the future!
