The Process:
"Triple washed" and "aerobic fermentation" are both coffee processing methods in their own right but in this case it refers to the combination of processing steps, including a more intensive washing process and fermentation in the presence of oxygen. Triple washing involves additional steps like cherry flotation or post-fermentation soaking, beyond the standard wet processing method. Aerobic fermentation occurs when the coffee beans are exposed to oxygen during the fermentation stage, allowing microorganisms like yeasts and bacteria to aid the fermentation of the coffee.

About Producer:
Jhony Melo is one of the sons of Nelson Melo, born in Samaniego, Colombia. Nelson moved to the Caldas region, 900km away from his origin, to escape the constant threats of armed conflicts in that region. With his wife Maria Bercelia Ortega, he bought Hacienda Bellavista. Jonny has always helped his father with the farm. Some years ago, Nelson rewarded him with a piece of land where he could grow his own coffees on! Jonny took this opportunity with commitment and enthusiasm and in his short time as an individual coffee grower, has received two awards.
Why we’re stoked!
This coffee had its debut on the US National Barista competition stage a couple months ago and we couldn't be more excited it share it with you! Jhony and this coffee are both something super special and we hope it leaves a mark on you the same way it has for us.
